My other half loves to come home after working 16 hours to a delicious home-cooked meal. It’s not always easy to negotiate the kid’s karate lessons with his arrival home, so, one of my go-to meals is slow cooker beef brisket in the crockpot. It literally couldn’t be any easier and can be prepared in a few minutes before I go to work. It’s a lot simpler than cooking a roast in the oven, as you can leave the brisket slow cooking while you are out of the house, leaving your time free to do other things. So, here’s how I cook beef brisket in the slow cooker.
Firstly, my significant other doesn’t like anything fancy added to his beef brisket, he prefers it just as it is, so I’m not going to be adding any fancy rubs or seasoning to this meal but you can if you wish.
How to cook beef brisket in the slow cooker.
- Use vegetables to stop the brisket from burning.
Cut two onions in half and add them to the bottom of the slow cooker. If you haven’t got two onions you can use two carrots or two potatoes.
- Place the brisket on top of the potatoes.
Add the brisket so it is resting over the onion or potato. This is to stop the meat burning on the bottom of the slow cooker.
- Add seasoning.
Season well to taste with salt and pepper.
- Add water.
Add one cup of water to the bottom of the slow cooker. The water is optional, however, I think that it helps to keep the brisket moist and prevents it from drying out.
- Adjust the heat setting
Turn the slow cooker to low.
- Cook for 8 hours
Cook for 8 hours on low or 4 hours on high.
Viola, you have a beautiful, tender, delicious crockpot brisket ready for dinner with zero effort! This is super easy for days when you are busy and have no time to prepare food.

I like to serve this slow cook beef brisket with homemade chips, salad or potato.
You could make a BBQ sauce to add to the water at the bottom of the slow cooker if you wanted to jazz up your brisket recipe a bit.
